But first of all, champagne is about land (quite chalky), about climate (continental with rainy winters and hot summers) and finally about technique (two fermentations in the bottle). I work as an export agent for several small-scale, high-quality, family-owned wineries; these are the winemakers I prefer to showcase. Famous Champagne houses certainly have great cellars filled with contemporary art and offer white-glove service. I prefer to show you Champagne as locals know it: a history, a technique and, of course, a business.
